觉得在外餐具可能不太干净,烫一烫就可以杀菌了。
但,真的可以杀菌吗?

如果餐具不干净,
不干净的餐具,一般可能携带的微生物有细菌、霉菌(真菌)、病毒和芽孢。下面看看它们的耐热性情况。
细菌可谓是我们听闻最多的一种菌,如金黄色葡萄球菌、沙门氏菌、大肠杆菌等。若食品或食品接触材料(如餐具)受到细菌污染,人进食后容易引发肠道感染,出现腹泻、呕吐等情况。大多数细菌不耐高温,以上述代表性细菌为例,在高水活的环境下,金黄色葡萄球菌的灭活温度是71.7℃持续15秒。沙门氏菌处于70℃以上温度下几分钟就可以被杀灭。大肠杆菌对外界的耐热性很弱,只要煮沸或70-80℃,就可以被杀灭。
霉菌是真菌的一种,肉眼可见的像水果、糕点的发霉就是霉菌,大多数霉菌在70-80°C温度下就足够被杀灭,但真菌孢子(休眠状态的真菌)及一些真菌毒素(如黄曲霉毒素)无法在高温下杀灭。如果餐具有发霉,单纯用热水烫一烫,是没有作用的。
大部分病毒的热稳定性不高,因为病毒的结构就是简单的蛋白质衣壳包裹着DNA/RNA核心,即使是稳定性较高的DNA,在90℃的时候双链也会解螺旋,能够被消灭。但一些病毒如甲肝病毒,耐受温度比较高,在工业上,100°C持续2分钟才有把握消灭。
芽孢是某些特定细菌在恶劣环境下形成的一种 “休眠体”,它耐热,耐酸,耐干旱。细菌“变身”成芽孢时,它就失去了生命特征和繁殖能力,但一旦条件合适,芽孢会重新萌发成细菌。一般情况下,热水烫对芽孢的作用不大。
用热水烫餐具,只要把握好温度和时间,可以达到类似“巴氏杀菌”的效果。再结合以上微生物的受热特性,可以得出结论:用热水烫餐具,可以杀灭绝大部分致病细菌,但对于霉菌的孢子和毒素、耐高温的病毒以及细菌的芽孢等无能为力。
(注:巴氏杀菌的其中一种操作是牛奶加热到75℃-90℃,保温15s-16s[3]。)

有实验室对已清洗消毒的干净餐具进行了人工污染(即将沙门氏菌、金黄色葡萄球菌的菌株混合液涂抹在上述餐具内表面),按照不同的冲烫温度和冲烫时间对餐具进行“用热水烫一烫”处理,最后按照食品安全国家标准GB 4789.2-2016检测人工污染餐具冲烫前后的菌落总数。

由上图可知,如果用100℃的沸水烫餐具并且保证持续30秒以上,那对去除餐具中的细菌是有明显效果的,菌落总数能减少90%。如果水温在60℃及以下,去除细菌的效果有限,菌落总数只能减少到25%以下。
